Socca, Tomato Jam, Sauteed Spinach with Currants, Pine Nuts, Red Onions and Sherry Vinegar, Roasted Wild Mushrooms, Roasted Cauliflower, Coconut Cream Parfait  with Fresh Berries & Homemade Granola

Socca is a Northern Italian rustic chickpea crepe.  We'll use ours as a vehicle for yummy fillings like Sauteed Spinach with currants, pine nuts and red onions, roasted cauliflower or roasted wild mushrooms.  And we'll top that off with a yummy tomato jam that packs a punch.  And to satisfy that sweetooth, we'll enjoy a coconut cream parfait with fresh berries and homemade granola
